Bert-Jan Lantinga - founder of The Butchery - has been a big fan of Asian cuisine from an early age. Through the years he has deepened his knowledge in the diverse culinary possibilities of this unique continent. In Singapore - where Bert-Jan lived for a long period of time - he truly fell in love with the Asian cuisine. Sushi, Teppanyaki, shabu shabu, yakiniku, Korean BBQ, but also Thai & Vietnamese: Asian food in all his varieties stole his heart. In Singapore, he worked at a Meat Trading Company where he developed his skills and interest in various cutting techniques for shabu shabu and Korean BBQ to a next level.
When he moved back to the Netherlands, he continued visiting Asia at least twice a year. To keep in toch with his friends, but also to enjoy his favorite food and to learn from Asian chefs. He visited Seoul at least ten times, just to make sure he tried the best Korean BBQ restaurants in town. He also enjoyed several authentic Japanese Wagyu menus in Tokyo and of course, he took all his experiences back to The Netherlands.
Bert-Jan is the third generation of a butcher’s family and currently at the helm of two butcher’s shops, his own artisanl sausage and meat production location and of course The Butchery. To further expand the range of special meats, he started an online butcher's shop about three years ago. With The Butchery he delivers a wide range of the highest meat quality throughout the Netherlands. And the best part: all from the world’s best breeds like A5 Wagyu, USA Black Angus PRIME, Canadian Angus, Ocean Beef New Zealand, Aberdeen Angus Uruguay, Hereford Argentina, Ibérico Spain or Sashi Beef Finland.
Meanwhile, the Butchery has developed into an online Wagyu Specialist (especially A5 BMS12). In addition, The Butchery offers a wide range of shabu shabu, yakiniku & yakitori, teppanyaki and of course Korean BBQ meat. Bert-Jan Lantinga has studied various courses in cutting techniques from 2mm (shabu shabu) to 4mm (yakiniku) slices and is still learning every day. This results in an increasingly extensive range of the Asian Style cuisine.
How does online ordering work? That is quite simple. Choose your favourite products, place them in the shopping cart and place your order. Orders placed before 10 a.m. will be delivered the same evening, but if you want, you can choose your own delivery day. You will receive your order flash frozen (within the hour super freshly frozen within the hour), so the meat can go straight into the freezer.
Good to know is that all meat is trimmed, handcut, processed and cut/sawn , vacuum-packed and flash-frozen in our own butcher's shop.

Bert-Jan Lantinga – oprichter van The Butchery - is al van jongs af aan groot liefhebber van de Aziatische keuken. Door de jaren heen heeft hij zich dan ook steeds verder verdiept in de uiteenlopende culinaire mogelijkheden van dit unieke werelddeel. In Singapore – waar Bert-Jan een lange periode woonde – heeft hij zijn hart definitief verloren aan de Aziatische keuken. Van sushi tot teppanyaki en van Wagyu tot stir fry: het sprak hem allemaal aan. In Singapore was hij werkzaam bij een handelshuis en daar is zijn interesse in verschillende snijtechnieken zoals shabu shabu en Korean BBQ verder ontwikkeld. Eenmaal terug in Nederland, reisde hij minstens twee keer per jaar af naar Azië (veelal Korea en Hongkong), waar de Korean BBQ bijna dagelijks op het menu stond.
Inmiddels staat Bert-Jan als derde generatie van een slagersfamilie aan het roer van twee slagerijen, een eigen worstmakerij en een compleet eigen productie. Om het draagvlak van bijzondere vleessoorten verder uit te breiden is hij zo’n drie jaar geleden gestart met een online slagerij. Met The Butchery levert hij een ruim assortiment vlees van de allerhoogste kwaliteit door heel Nederland. The Butchery voert de beste rassen van over de wereld. Denk bijvoorbeeld aan Wagyu, USA Black Angus PRIME, Canadian Angus, Ocean Beef Nieuw-Zeeland, Aberdeen Angus Uruguay, Hereford Argentinië, Ibérico Spanje of Sashi Beef Denmark.
Inmiddels heeft The Butchery zich ontwikkeld tot online Wagyu Specialist (met name A5 BMS12). Daarnaast biedt The Butchery een groot assortiment aan shabu shabu, yakiniku & yakitori, teppanyaki en natuurlijk Korean BBQ. Eigenaar Bert-Jan Lantinga heeft zich met diverse cursussen verdiept in snijtechnieken in slices van 2mm (shabu shabu) tot 4mm (yakiniku), maar leert nog elke dag bij. Dat resulteert dus ook in een steeds uitgebreider assortiment van deze unieke keuken.
Hoe online bestellen werkt? Dat is vrij eenvoudig. Kies je favoriete producten, plaats ze in de winkelwagen en plaats je bestelling. Voor 10 uur besteld, is dezelfde avond in huis, maar als je wilt, kun je zelf je leverdag kiezen. Je ontvangt je bestelling flashfrozen (binnen het uur supervers ingevroren), dus het vlees kan zo de vriezer in.
Goed om te weten is dat al het vlees in eigen slagerij wordt getrimd, verwerkt en versneden/gezaagd.
